Easy Banana Pancake Recipe

Banana pancakes are a wonderful twist on the traditional pancake recipe. I discovered them whilst looking for a way to enjoy pancakes with my daughters after going gluten free. As they contain no grain, they are a delicious alternative that really work.

You don’t have to be experienced in the kitchen to make these a success and they are a great way of getting children involved, they are uncomplicated and always go down well and you can have lots of fun adding toppings. A delightful way to start the day with a healthy breakfast on a Sunday morning before a walk in the fresh air.

What’s more, my version only takes two main ingredients to achieve. This recipe is for one pancake made in a small frying pan however, you an use the same mix to make 4 small pancakes or even, a pancake tower.

Why Banana Pancakes?

Banana pancakes make a great breakfast for several reasons. Firstly, they are delicious but they also provide a nutritious start to your day. Bananas are rich in potassium, vitamin C, and dietary fibre, therefore, your digestive system will love them. The great thing is, bananas are naturally sweet so there is no need to add any sugar to the mix or to your toppings.

That said, you can have fun experimenting with mixing in a whole variety of ingredients and trying out different toppings to find your perfect banana pancake combination. Banana pancakes have a light, fluffy texture and they are soft on the palate making them a delightful treat that can be enjoyed any time of day, not just for breakfast.

Equipment Needed

Before you start cooking, ensure you have the following kitchen tools:

  • Mixing bowls
  • Whisk or fork
  • Non-stick skillet/frying pan
  • Spatula

Optional Add-Ins

While the basic recipe is fantastic on its own, consider adding these optional ingredients for added flavor and texture:

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Chopped nuts (walnuts or pecans)
  • Chocolate chips
  • Blueberries or other berries
  • Raisins

Serving Suggestions

Banana pancakes are delicious on their own, but topping them can enhance your dining experience. I topped mine with warmed blueberries, natural greek yoghurt, 1/2 teaspoon of flaxseed and a sprinkling of walnuts.

  • Greek yogurt
  • Peanut or almond butter

If you’re feeling adventurous, consider trying these creative variations:

  • Add a sprinkle of shredded coconut for a tropical flair.
  • Serve with a dollop of lemon curd for a zesty contrast.
